- 1 cup steel-cut oats
- 2 cups milk
- 2 cups water
- 1-2 tablespoons sugar
- crushed pistachio
Mix water and milk and bring to simmer on medium heat. Toast the oats in a pan for about five minutes and add them to the simmering milk and water. Reduce the heat and let simmer for 15 to 20 minutes. Add a pinch of salt and continue to simmer for another 10 minutes until all the liquid is absorbed. Remove the creamy porridge from the heat and optionally add some ground cinnamon, nuts or dates.
For the poached apricots caramelise the sugar and add the apricots cut in quarters. Let them cook at high temperature until they become just a little soft. Stir in a small amount of butter and decorate the porridge.
Sprinkle some crushed pistachio to finish off the dish.
